A modern, practical cellar using up to date techniques.
A well honed harvest produces about 65,000 bottles from pristine grapes in a pneumatic press. Fermentation takes place in heat-regulated stainless steel vats, the wine developing on fine lees with static cool racking. The rosé and white wines are filtered on grids; the red is clarified. Bottled on site at the vineyard.
Two pneumatic wine-presses, one with a closed cylinder for the rosé wines, enable the grapes to be pressed lightly according to the type of wine required. A stainless steel fermentation vat, and the ability to fine tune temperatures, together with a skilled team and the advice of a specialist Provencal winemaker, mean that we can develop different vintages in the best possible conditions.
The automated bottling process maintains the high quality of the final bottled wine.
Two air conditioned rooms are devoted solely to maturing red wine in barrels and the storing of the final bottled wine.
